South West Chef of the Year demonstrates local cooking innovation at Weston Food Festival

Foodies, chefs, and stallholders selling sweet and savoury treats recently came together for the Weston super Food Festival at the Tropicana, Weston-super-Mare.
South West Chef of the Year Winner 2013, Steve Ashworth headed up a sous vide demonstration and discussion with local company Clifton at Home.
Marketing Manager of Clifton at Home, Charlotte Cross then talked about the company’s background and being temperature control experts, how they have used this knowledge to manufacture high quality stainless steel water baths for laboratory use, before breaking into the catering market eleven years ago.
Following Charlotte’s introduction, Marketing Assistant for Clifton at Home, Fi Davis described how important it is for families to create simple, healthy meals from scratch, whilst using up to date modern technology to achieve this. She then continued to explain how all the recipes on the Clifton at Home website are easy to cook and will benefit users by achieving healthier meals, with mouth watering tastes, as well as the importance of meal planning to help reduce food bills.
Steve then finished off the demo by showing the audience his step by step guide to using the water bath, demonstrating some pulled pork he’d pre cooked. The chef then poured some BBQ sauce over the top of the meat and mixed it altogether to create a delicious and simple BBQ pulled pork recipe, in which he used the Clifton at Home recipe. The audience then sampled the pork which had been cooked in the sous vide bath at 70˚C for twenty four hours.
